Steps

preheat oven to 200°F. chop the pumpkin, zucchini and capsicum into roughly 2cm cubes. Cut the onion into small wedges.

place all veggies together in a baking dish and coat in the olive oil. Stir to mix and thoroughly coat. Place in oven for around 20 mins or until cooked.

meanwhile, place the quinoa with 3 cups water into a pot and bring to boil. Reduce to slow simmer until water fully absorbed.

Once veggies and quinoa are cooked, combine together.

Add to the mix crumbed feta; finely chopped mint; olives and squeeze a large lemon over the whole lot. Mix and enjoy!
