Baked Giant Beans

A traditional recipe for the most delicious baked giant beans!!
If you like, lightly fry thick slices of country sausage and add them to the baking dish before putting the food in the oven.

If you like, lightly fry thick slices of country sausage and add them to the baking dish before putting the food in the oven.
Cooking Instructions

Soak the giant beans in lukewarm water overnight for 8-10 hours.

The next day, rinse them well and boil until they are half-softened. This takes about 1 hour (15-20 minutes in a pressure cooker). Be careful not to let them become mushy.

When ready, drain the beans and place them in a baking dish. Reserve 3 cups of the cooking water.

Preheat the oven to 350°F (180°C).

Meanwhile, heat the oil in a deep pan and add all the vegetables. Sauté over medium heat until they soften, about 7-8 minutes.

Add the tomato paste, crushed tomatoes, all the herbs and spices, and 2 of the 3 cups of reserved water. Simmer the sauce for 10 minutes.

Pour the sauce over the beans in the baking dish, mix well, and place in the oven.

Bake for 45 to 60 minutes, ensuring the dish retains its oil and develops a nice, thick sauce. If the liquid evaporates too much during cooking, add more from the reserved cup.

I only thaw out the amount iam going to use depending on what else we are having depending on how many wings each person gets, I normally do 4-6-8 wings each. They come from a region in Northern Greece called Prespa (Prespes). A beautiful part of Greece that has a gorgeous lake along with some of the most rarest fish and birds that you will love if your a Nature Lover!! 🙂 It is absolutely worth the trip!! 🙂 This area grows the best beans and most of which are organic. There is a very small fruit and vegetable market in the town that I mentioned that sells these beans, so when its time to head back to NL we stop by for some last minute food (beans) shopping.This is such a healthy, delicious, vegetarian meal full of Fibers and Protein!
