Ingredients

5-6 servings
  1. 500 gramsgiant beans
  2. 2onions, finely chopped
  3. 2-3 clovesgarlic, finely chopped
  4. 2carrots, sliced
  5. 1red or orange bell pepper, sliced
  6. 1green bell pepper, sliced
  7. 1bay leaf
  8. 1 cupolive oil
  9. 1 cancrushed tomatoes
  10. 1 tablespoontomato paste
  11. 1/2 bunchparsley, finely chopped
  12. 3 stalkscelery, finely chopped
  13. 1/2 teaspoonthyme
  14. 1 teaspoonsweet paprika (or hot if preferred)
  15. salt
  16. pepper
  17. red pepper flakes (optional)

Cooking Instructions

    Soak the giant beans in lukewarm water overnight for 8-10 hours.

    The next day, rinse them well and boil until they are half-softened. This takes about 1 hour (15-20 minutes in a pressure cooker). Be careful not to let them become mushy.

    When ready, drain the beans and place them in a baking dish. Reserve 3 cups of the cooking water.

    Preheat the oven to 350°F (180°C).

    Meanwhile, heat the oil in a deep pan and add all the vegetables. Sauté over medium heat until they soften, about 7-8 minutes.

    Add the tomato paste, crushed tomatoes, all the herbs and spices, and 2 of the 3 cups of reserved water. Simmer the sauce for 10 minutes.

    Pour the sauce over the beans in the baking dish, mix well, and place in the oven.

    Bake for 45 to 60 minutes, ensuring the dish retains its oil and develops a nice, thick sauce. If the liquid evaporates too much during cooking, add more from the reserved cup.
