Ingredients

45 mins

1 tbspCoconut Oil
1/2onion, chopped
2 cupCarrots, chopped to your liking
2 cupHam, cooked & cubed
1 tbspTomato bouillon (often found in hispanic food section)
1/2bell pepper, chopped
5potatoes, diced & peeled (medium size)
1 cupdry lentils, rinsed
1ham bone

45 mins

Heat oil in covered pot over medium heat.

Add onions & carrots - cooked til soft.

Add ham, tomato bouillon, potatoes, lentils, and enough water to cover.

Add ham bone and cover pot.

Keep at low boil. Check pot occassionally. Stir & add water as needed.

Dinner is done when the potatoes AND lentils are tender.
