Ingredients

45 mins
  1. 1 tbspCoconut Oil
  2. 1/2onion, chopped
  3. 2 cupCarrots, chopped to your liking
  4. 2 cupHam, cooked & cubed
  5. 1 tbspTomato bouillon (often found in hispanic food section)
  6. 1/2bell pepper, chopped
  7. 5potatoes, diced & peeled (medium size)
  8. 1 cupdry lentils, rinsed
  9. 1ham bone

Steps

45 mins
  1. 1

    Heat oil in covered pot over medium heat.

  2. 2

    Add onions & carrots - cooked til soft.

  3. 3

    Add ham, tomato bouillon, potatoes, lentils, and enough water to cover.

  4. 4

    Add ham bone and cover pot.

  5. 5

    Keep at low boil. Check pot occassionally. Stir & add water as needed.

  6. 6

    Dinner is done when the potatoes AND lentils are tender.
