Mom's Homemade Chili

This was my favorite meal growing up. Mom used to make it for all the special occasions! My brothers and I went crazy for her recipe and no matter where we went or who made it, no other chili recipe compared to hers and my grandmother's. A nostalgic and spicy blast from the past
Steps
- 1
Chop the onion and green pepper into tiny cubes. Combine and set aside.
- 2
Brown and drain the ground beef in a large skillet, drain and move to a large pot. Add the chopped green peppers and onions, stir and cook over low heat.
- 3
Mix in the blended tomatoes and increase heat
- 4
Add the can of kidney beans (Important! Do not drain the brine!)
- 5
On medium/high heat, bring the chili to a slow bild, stirring occassionally. Add the seasoning as desired. Feel free to taste to achieve the right amount of spices for you. If you like a more spicy chili you can also add cayenne pepper for that extra kick
- 6
While the chili is boiling, cut through the chili peppers and add them in. Allow it to boil for a few more minutes before covering the pot and bringing the heat down to simmer.
- 7
Allow to simmer for a few hours, stirring occassionally. Chili is ready when the peppers and beans are tender.
- 8
Serve with crackers, cheese, on hot dogs, over rice... get creative with it! You're welcome ;)
