Ingredients

  2. 200 gramsChocolate Digestives
  3. 100 gramsButter
  4. Filling
  5. 1 tbspGelatine
  6. 100 mlBoiling Water
  7. 600 gramsCream Cheese
  8. 100 gramsGranulated Sugar
  9. 1/4 tspSalt
  10. 284 mlSour Cream
  11. 2 tspVanilla Extract
  12. 113 gramsWhite Chocolate
  13. 150 gramsChocolate Digestives

Cooking Instructions

    Combine the base ingredients and press onto base of 20cm springform tin. Chill for 30mins

    Mix the gelatine with the water, stir well and let cool.

    To make the filling: Put the cream cheese, sugar, and salt in a large bowl. Mix until smooth. Stop mixing and add sour cream, gelatine and vanilla. Mix for 3 mins longer.

    Melt the white chocolate

    Stir the melted chocolate into the cream cheese mixture until smooth.

    Pour half the cream cheese mixture into the springform pan. Spinkle half the chcolate biscuits over the mixture. Pour the remaining cream cheese mixture and scatter the remaining biscuits over the top.

    Place in the fridge for at least 2 hrs preferably overnight.
