Ingredients

4 servings
  • 1/2 cupdry green mung beans
  • 1/2 cupdry mung dal (split yellow)
  • 1 cuphigh quality indian basmati rice
  • 2in. piece ginger root minced
  • 1 tbspturmeric
  • 1 tbspcumin
  • 1 tbspblack mustard seeds
  • 1 tbspfennel seeds
  • 1 tbspmustard seeds
  • 1/2 tspground coriander
  • 1/2 tspfresh cracked pepper
  • 1 tbsphimaayan pink sea salt
  • 1 stickkombu
  • 1/2 tspcinnamon

  1. 1

    wash the mung beans and soak them in water overnight

  2. 2

    in a large skillet or wok, melt the ghee.

  3. 3

    add seeds to the ghee and saute until you hear the seeds pop

  4. 4

    quickly add the spices, ginger, rice, and beans to the mix. coat the rice and beans with the spices and seeds (important to do all these steps quickly so you don't burn the spices

  5. 5

    slowly add the water

  6. 6

    add the vegetables and lightly stir all the ingredients

  7. 7

    bring water to boil.

  8. 8

    lower heat, cover and cook for 45-60 minutes

  9. 9

    stir in the salt at the very end

  10. 10

    melt ghee or coconut oil over the top and garnish with cilantro
