Ingredients

  1. 6 cloveMinced garlic
  2. 4 tspKosher salt
  3. 1 tbspGranulated sugar
  4. 2 tspLime zest
  5. 2 tspOlive oil
  6. 1 1/2 tspGround cumin
  7. 1 tspBlack pepper
  8. 1/2 tspCayenne pepper
  9. Sauce
  10. 1/4 cupOlive oil
  11. 2 tbspLime juice
  12. 2 tbspFresh minced cellantro
  13. 2 tspFresh oregano
  14. 2 tspReserved spice mixture.

Steps

    Mix the rub ingredients.

  2. 2

    Set aside 2 teaspoons for the sauce later.

  3. 3

    Pat the chicken dry.

  4. 4

    Cut slits into the chicken down to the bone. 1 across the drum. 1 across the joint. 2 across the thigh. 1 across the drum of the opposite side. Keep the skin together.

  5. 5

    Rub the mixture into the cuts and around all 4 quarters.

  6. 6

    Cover and place in the refrigerator for at least 1 hour. Can be done 24 hours in advance.

  7. 7

    Prepare the grill. 1 cooler side. 1 hot side.

  8. 8

    Grill the chicken on the cooler side for 10 minutes per side.

  9. 9

    Then grill on the hot side for 3 minutes per side until it reaches 175°F.

  10. 10

    Remove from the grill. Tent and let the chicken rest for 5 minutes.

  11. 11

    Whisk all of the sauce ingredients together.

  12. 12

    Spoon over the chicken then serve.
