Had some of that Latina Fresh Ravioli in the fridge that had to be used- also bought a bag of home grown tomatoes from a friend at my local club (beautiful!). So I made a soup.

Ingredients

  1. 375 gramsChicken & garlic ravioli
  2. 1/3 cupChopped chives
  3. 2 tbspChopped parsley
  4. 1Clive garlic, minced
  5. 1 tbspChicken gravy powder
  6. 1 tbspButter
  7. 3Rasher bacon, diced
  8. 1 cupMushrooms, sliced
  9. 1/3 cupfrozen chopped spinach, defrosted
  10. 1/2Red capsicum, finely diced
  11. 1 canTomato soup, (approx 440ml)
  12. 1/4 cupGrated Parmesan cheese
  13. 300 mlThickened cream
  14. 2 tbspSour cream
  15. 1Salt & pepper to taste
  16. 3Tomatoes, chopped

Cooking Instructions

  1. 1

    Add water to a large pot- bring to the boil- throw in ravioli- return to boil and cook for 5 minutes. Strain and set aside.

    In the same pot add butter and bacon and cook for for 2 minutes.

  3. 3

    Sprinkle on chicken gravy powder and also add mushrooms and garlic. Cook for further 2 mins.

    Now add diced tomato, capsicum and herbs. When tomato is slightly softened add tomato soup, both creams, cheese, spinach and ravioli.

    Heat through, season to taste and serve with toast.

    Not the most healthy meal but damn! It's luscious! Enjoy
