#Mycookbook My hubby makes this delish Creole spice for grilling and I love to use it in my homemade jambalaya recipe. I created the recipe so it may not be "authentic" but it's delish, spicy, and packed with flavor! Super easy too! Enjoy!!!
Cooking Instructions

Mix together the Creole seasoning in bowl (this is enough for recipes in the future, good for grilling etc)

In Dutch oven, heat 1 tbs butter and brown/ cook chicken then remove and set aside.

Add sausage to pot and stir for 2 min, then add onion, garlic,bell pepper, celery and season with 1 tbs of Creole spice,tomato paste and cook for 4 min.

Stir in the rice,then pour in canned tomatoes, chicken broth, chicken, and bay leaves. (Add a little more Creole seasoning if you feel like it needs more)

Bring to simmer over medium-high heat then reduce to medium-low, cover and let simmer 15 min.

After 15 min, add the shrimp and cook another 5-10 min until shrimp is pink.

Remove from heat and let sit 5 min, then serve. Enjoy 😊

I would love to cook completely from scratch, but time does not allow that. I have taken my family's traditional recipes and adapted them for time. I am a fan of layering in flavor, and I like to allow one pot dishes to cool for at least 10 minutes after cooking to serve. Crawfish and crab claws are great additions to this recipe, when available. I hope you enjoy my version of Creole Jambalaya. alley927cat -

This recipe is taken with liberties from Paul Prudhomme. If you don't plan on laboring with shrimp shells to make a seafood stock, there are several seafood concentrate pastes on the market. I use the one from penzeys. Make sure you follow the directions for reconstitution exactly. I've found from experience that using double strength stock makes an unpalatably salty and fishy jambalaya. Of course you can also just use chicken stock if you can't find seafood. Lance Wilson
