preheat oven to 375 grease 9by13 baking dish then add apples cut side up

in Med. bowl combine sausage, parsley and maple syrup

using a rubber spatula stuff each apple so that the sausage mixture mounds out of the top then drizzle with evoo

cook for about 45 min

in salad bowl combine apple cider vinegar and mustard then whisk in 1/4 cup evoo season with salt and pepper

toss the greens with dressing and serve with the stuffed apples
