Ingredients

4 servings
  1. 3eggs
  2. 1 cupmilk
  3. 1 cupbutternut squash puree
  4. 4 cupsflour
  5. Freshly grated nutmeg
  6. Salt and pepper
  7. 1-2 tbspoil
  8. 2 tbspbutter
  9. 1 tbspchopped parsley
  10. 2 tbspbread crumbs (or more)
  11. 1 cupkale

Cooking Instructions

    In a large bowl whisk eggs, milk, squash.

  2. 2

    Gradually stir in enough flour to form a thick batter.

  3. 3

    Season heavily with nutmeg, salt and pepper.

  4. 4

    Using a rubber spatula, press batter through colander into a large pot of boiling water.

  5. 5

    When spaetle floats to the top, they are done. Remove cooked spaetzle from pot. Cool.

    Drain and toss lightly to coat with oil.

  7. 7

    Me,t butter in a sauce pan add spaetzle, parsley, breadcrumbs and kale. Season to taste.
