Ingredients

  1. 3avocados mashed or blended for better consistency
  2. 1 1/2 cupsour cream
  3. 1 1/2 cupsalsa
  4. 1 3/4 cupshredded mexican blend cheese
  5. 3/4 cupchopped green onions
  6. 1 1/2 cupshredded iceberg lettuce
  7. 1 canpitted black olives
  8. 1 tbsptaco seasoning
  9. 1cilantro for garnish
  10. 1vegetable oil
  11. 1 canpinto beans (do not drain liquid)

Steps

  1. 1

    Coat the bottom of a frying pan with oil and heat on low flame. Add the can of undrained beans and the taco seasoning.

  2. 2

    Mash and stir the beans to your desired consistency, I use a small glass cup to do this.

  3. 3

    Heat until the mashed beans are bubbling, turn off flame and spread into the bottom of a deep glass bowl.

  4. 4

    Layer remaining ingredients over the beans, first avocado then salsa, lettuce, sour cream, green onions, olives, then shredded cheese. pluck three leaves of cilantro and place in the middle.

  5. 5

    Refrigerate for about 30 minutes covered with plastic wrap. Serve with tortilla chips.
