Ingredients

  1. 5sausages; sliced, any variety
  2. 1 eachred, yellow, and green bell pepper; large dice
  3. 1 packagesbacon; large dice
  4. 1 largeSpanish onion; large dice
  5. 4 clovegarlic; minced
  6. 1 tbspapplewood seasoning
  7. 1 tbsphoney
  8. 1 1/2 tspsmoked paprika
  9. 1vegetable oil; as needed
  10. 1 pinchof salt and pepper

  1. 1

    Place diced bacon in a large, cold saute pan. Render fat slowly on medium-low heat. Adversely, you could cook the bacon in the oven, then dice, but save the fat!

    Remove bacon from pan and set aside. Add sausages. Cook 95%. Set aside. Adversely, you could grill the sausages, then slice.

    Add peppers and onions to pan. Add olive or vegetable oil if needed. Add a pinch of salt and pepper. Cook on medium-low heat until nearly tender. Add garlic. Cook until fragrant. Return sausages to pan. Add dried spices. Toss.

    Garnish with crispy bacon.

    Variations; Beer, mustard, horseradish, parsley, basil, oregano, thyme, shallots, crushed red pepper flakes, celery, malt or apple cider vinegar, maple syrup, molasses
