Place diced bacon in a large, cold saute pan. Render fat slowly on medium-low heat. Adversely, you could cook the bacon in the oven, then dice, but save the fat!

Remove bacon from pan and set aside. Add sausages. Cook 95%. Set aside. Adversely, you could grill the sausages, then slice.

Add peppers and onions to pan. Add olive or vegetable oil if needed. Add a pinch of salt and pepper. Cook on medium-low heat until nearly tender. Add garlic. Cook until fragrant. Return sausages to pan. Add dried spices. Toss.

Garnish with crispy bacon.
