Ingredients

  1. 2 lbgroundbeef, lean
  2. 1 lbfresh mozzarella cheese, sliced in 1/4 inch pieces
  3. 1 smallloaf (day old) Italian Bread
  4. 2eggs
  5. 1 smallonion, chopped
  6. 3 tbspred or green bell pepper, diced fine
  7. 4garlic cloves, chopped
  8. 1/4 cupfresh parsley
  9. 1/4 cupfresh basil
  10. 1salt and pepper to taste
  11. 1/2 cupcanned tomato sauce, crushed
  12. 1/2 cupketchup
  13. 1/4 cupbrown sugar, unpacked

    Mix last three ingredients in a small bowl, reserve.

  2. 2

    Preheat oven to 350º F

  3. 3

    In a large bowl add broken pieces of Italian bread into water. Soak, then squeeze out water from soaked bread. Discard all water, adding bread back to bowl, pull apart.

  4. 4

    Add eggs, onion, peppers, garlic, parsley, basil, salt and black pepper and mix well.

  5. 5

    Add ground beef to bread mixture and mix well

  6. 6

    In large baking dish spread out half the meatloaf mixture

  7. 7

    Add mozzarella cheese on top, across the center of the mixture

  8. 8

    Layer remaining mixture on top

  9. 9

    Spread sauce mixture on top of meatloaf

  10. 10

    Bake to 165°F or about 45-55 minutes

  11. 11

    Let sit for a few minutes before slicing
