Ingredients

2 servings
  • 200 gramsorzo
  • 1 mediumonion finely diced
  • 1 clovegarlic finely crushed
  • 1 mediumcarrot grated and diced
  • 1/2 mediumleek shredded
  • 1 mediumtomato diced
  • 2 literveg or chicken stock
  • 1 tbspbutter
  • 1 tbspcooking oil
  • 1 tbspchopped parsley (optional)

Steps

  1. 1

    sweat the onions and carrot off in a pan with oil for a few minutes

  2. 2

    add orzo and garlic. stir for another few minutes

  3. 3

    add one cup of stock. constantly stir until liquid is absorbed. repeat until you have used half the liquid

  4. 4

    add the leeks and tomato

  5. 5

    continue adding and stiring in the stock until the rice is cooked

  6. 6

    remove from heat and stir in butter

  7. 7

    add parsley and season to taste
