Ingredients

2 servings
  1. 200 gramsorzo
  2. 1 mediumonion finely diced
  3. 1 clovegarlic finely crushed
  4. 1 mediumcarrot grated and diced
  5. 1/2 mediumleek shredded
  6. 1 mediumtomato diced
  7. 2 literveg or chicken stock
  8. 1 tbspbutter
  9. 1 tbspcooking oil
  10. 1 tbspchopped parsley (optional)

Steps

  1. 1

    sweat the onions and carrot off in a pan with oil for a few minutes

  2. 2

    add orzo and garlic. stir for another few minutes

  3. 3

    add one cup of stock. constantly stir until liquid is absorbed. repeat until you have used half the liquid

  4. 4

    add the leeks and tomato

  5. 5

    continue adding and stiring in the stock until the rice is cooked

  6. 6

    remove from heat and stir in butter

  7. 7

    add parsley and season to taste
