Soften the hen in a pressure cooker for 40 minutes. If you don't have a pressure cooker, simmer over medium heat for 2 hours or until tender, with half of the herbs, salt, garlic, and the rest of the herbs.

Chop all the vegetables into small pieces and add them to the broth.

I used a food chopper to make the pieces small and save time.

Peel all the vegetables and cut them into cubes, including the corn.

Once the hen is tender, remove the broth and combine it with the vegetables.

When the vegetables are almost fully cooked, add the reserved herbs and the pieces of hen (cilantro, celery, and mint).

Now it's ready to enjoy! Here, we serve it with hot sauce and cassava bread (casabe, a flatbread made from cassava).
