Ingredients

  1. 2large Red or sweet potatoes
  2. 6-8 sliceBacon
  3. 2 cloveGarlic
  4. 2Jalapeño
  5. 4Green onions
  6. 1 cupCheese
  7. 3/4 cupSour cream
  8. 1Salt and pepper

Steps

  1. 1

    Cube and boil potatoes to almost soft.

  2. 2

    Fry potatoes in oil on high heat.

  3. 3

    Brown and Crumble bacon

  4. 4

    Sauté jalapeño onions and garlic

  5. 5

    Layer potatoes bacon cheese sautéed veggies.

  6. 6

    Add whipped eggs and sour cream.

  7. 7

    Bake at 400°F for 90 min
