Ingredients

6 servings
  • 2 cupQuinoa
  • 3 tbspolive oil, extra virgin
  • 1 1/2 tbspfresh lemon juice
  • 6 tbsppomegranate seeds + 2 TBSP for serving
  • 3 tbspSalted pistachios
  • 3 eachchopped scallions
  • 1 eachorange, peeled & sliced into rounds (optional)

Steps

  1. 1

    Rinse the quinoa in cold water to remove its bitterness.

  2. 2

    Bring 4 cups of salted water to a boil. Add quinoa, reduce heat to low, cover, & simmer for 15 to 20 minutes. Dress with the olive oil & lemon juice, season with salt and pepper, & set aside.

  3. 3

    Gently mix the pomegranate seeds, pistachios & scallions into the quinoa. Taste & adjust the seasonings.

  4. 4

    Serve with sliced oranges dressed with olive oil, if desired.

  5. 5

    Per recipe per serving: 137 calories, 17 g protein, 21 g carbohydrates, 5 g fiber, 10 g fat, 0 mg cholesterol, 192 g sodium.
