  2. 1 eachOnion
  3. 1 canDiced tomato
  4. 3 eachDiced celery stalk
  5. 2 eachDiced carrots
  6. 1/4 bunchCilantro
  7. 1 eachRoaster chicken, cut up
  8. 2 cupWater or broth
  9. 1as needed Salt
  10. 1as needed Pepper
  11. 1as needed Oil or butter

    Brown chicken pieces. Brown rice in oil, add onion, tomato, celery, carrots, cilantro. Add chicken and water or broth. Cover and cook 20-30 minutes.
