  • 1 eachOnion
  • 1 canDiced tomato
  • 3 eachDiced celery stalk
  • 2 eachDiced carrots
  • 1/4 bunchCilantro
  • 1 eachRoaster chicken, cut up
  • 2 cupWater or broth
  • 1as needed Salt
  • 1as needed Pepper
  • 1as needed Oil or butter

    Brown chicken pieces. Brown rice in oil, add onion, tomato, celery, carrots, cilantro. Add chicken and water or broth. Cover and cook 20-30 minutes.
