  • 1 tspginger
  • 1 1/2 tbspextra virgin oil
  • 1potato cubed
  • 4garlic cloves
  • 1carrot cubed
  • 1onion cubed
  • 1jalapeño sliced
  • 2 tbspunsalted crushed cashews
  • 4 oztomato sauce
  • 1 tspsalt
  • 1 1/2 tbspcurry
  • 1 cupfrozen green peas
  • 1 cupcoconut milk
  • 1 dashcilantro
  • 1 dashcumin
  • 1 dashnutmeg
  • 1 dashcinnamon

Steps

  1. 1

    Heat oil over medium high

  2. 2

    Stir in onion and cook 5 minutes

  3. 3

    Mix in ginger and garlic, cook 1 minute

  4. 4

    Mix potato, carrot, jalapeño, cashews and tomato sauce

  5. 5

    Season with salt and curry

  6. 6

    Cook and stir 10 minutes

  7. 7

    Stir peas and cream

  8. 8

    Reduce heat to low, cover and simmer 10 minutes

  9. 9

    Garnish with cilantro

  10. 10

    Serve on rice
