  • 2 lbchicken breasts bonless
  • 48 ozwhole peeled tomatoes
  • 2 mediumonion
  • 2 mediumred onion
  • 2green peppers
  • 2red peppers
  • 2 ozsalt
  • 1/2 ozground black pepper
  • 2 tbspcrushed red pepper
  • 2 ozbutter
  • 1/2 cupchopped basil
  • 1/4 cupminced garlic
  • 1/4 cupall-purpose flour
  • 3 ozolive oil, extra virgin

    Preheat oven to 425

  2. 2

    Portion chicken for 6 oz filets

  3. 3

    Crush the tomatoes by hand leaving some chunks

  4. 4

    Cut peppers and onions julienne

  5. 5

    Work a saute pan with butter garlic onions peppers Basil . When softening add tomatoes salt pepper and crushed pepper

  6. 6

    Lightly flour and sautee chicken in one pan

  7. 7

    Place saute chicken in sprayed pan and pour over the other and place in oven ... Done when veggie on top get nice char
