I had some ground meat and didn’t know what to do with it. I had already made the main course, so the idea of making ravioli came to mind... and so I did.

To make the ravioli, place the flour, eggs, salt, olive oil, and water in a bowl.

Mix together, adding a little more water if needed.

Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.

Meanwhile, prepare the filling by sautéing the ground meat with onion, celery, and carrot in olive oil.

Add salt and a little water, and cook for about 2 hours (or use a pressure cooker and cook for 30 minutes).

Once the meat mixture is very dry, let it cool.

Add 2 eggs, black pepper, breadcrumbs, and red wine. Blend everything in a food processor until very fine.

Mix well and use this filling to stuff the ravioli, using a ravioli mold or ravioli cutter.
