The most famous Lebanese appetizer of all times! It consists of pureed chickpeas blended with tahini - sesame paste -, garlic and lemon juice. It is served with a drizzle of olive oil and pita bread.

Cooking Instructions

Drain the chickpeas and blend them in a food processor until you get a smooth paste.

In a big bowl, dilute the tahini paste with 1 tablespoon of warm water. Add the crushed garlic, lemon juice and salt. Mix well until you get a whitish liquid sauce.

Add the chickpeas paste to the sauce and mix well. Adjust lemon juice and salt to taste.

Serve in a shallow dish with a drizzle of olive oil and pita bread.

Garnish with mint leaves, a sprinkle of cumin or some whole chickpeas.

This recipe was modified from a restaurant trick to get ultra smooth hummus by processing the tahini first with sodium citrate and ice water. The sodium citrate helps retain the emulsion between the tahini oil and lemon juice. Instead of using soaked and cooked chickpeas, ive modified the recipe to use 1 large can of precooked chickpeas for convenience, but they require further cooking to soften. I add a healthy dose of lemon because i like the tartness and I think rosemary really compliments the earthy flavors of the chickpeas, but this could be left out or substituted for other herbs and flavors.
