Ingredients

  1. 1 tspExtra Virgin Olive Oil
  2. 1 mediumYellow Onion
  3. 3 cloveGarlic, chopped
  4. 12 ozBaby Spinach
  5. 1 cupRicotta Cheese
  6. 8 ozThawed, frozen artichoke hearts
  7. 1Salt and Pepper
  8. 1 cupCheddar Cheese Shredded
  9. 8 ozCream cheese

Cooking Instructions

    Preheat oven 350

  2. 2

    For the dip, in a sauce pan over medium heat, warm oil and sauté onion and garlic for 4 minutes. Do not brown, add baby spinach and sauté for 2 minutes

    Remove from heat, and stir in ricotta and cream cheese. Mix well

  4. 4

    Add artichokes and season with salt and pepper

  5. 5

    Divide mixture equally into oven proof serving ramekins

  6. 6

    Top with cheddar cheese and bake for 15 minutes

  7. 7

    Serve with tortilla chips
