Ingredients

  • 1 tspExtra Virgin Olive Oil
  • 1 mediumYellow Onion
  • 3 cloveGarlic, chopped
  • 12 ozBaby Spinach
  • 1 cupRicotta Cheese
  • 8 ozThawed, frozen artichoke hearts
  • 1Salt and Pepper
  • 1 cupCheddar Cheese Shredded
  • 8 ozCream cheese

Steps

  1. 1

    Preheat oven 350

  2. 2

    For the dip, in a sauce pan over medium heat, warm oil and sauté onion and garlic for 4 minutes. Do not brown, add baby spinach and sauté for 2 minutes

  3. 3

    Remove from heat, and stir in ricotta and cream cheese. Mix well

  4. 4

    Add artichokes and season with salt and pepper

  5. 5

    Divide mixture equally into oven proof serving ramekins

  6. 6

    Top with cheddar cheese and bake for 15 minutes

  7. 7

    Serve with tortilla chips
