  • 5large potatoes, peeled and sliced very thin
  • 1Valencia onion, sliced julienne
  • 5large eggs
  • 4 tablespoonsextra virgin olive oil
  • coarse salt
  • mayonnaise (optional)

    Pour the oil into a large skillet and heat. Add the onion and sprinkle a pinch of coarse salt. Stir occasionally for about 10 minutes.

    After this time, add the thinly sliced potatoes, mix, and cover. Turn occasionally until the potatoes are tender.

    In a large bowl, crack the eggs. Add a pinch of coarse salt and beat with a fork. Add the potatoes and onion, and mix the ingredients well.

    Heat the same skillet. Pour in the potato and egg mixture and let it set. Flip it with a plate and let it brown on the other side.

    Slide the tortilla onto a plate.

    Serve warm or cold, plain or with mayonnaise.
