Steps

Wash and soak urad dal overnight.

Grind urad dal to a smooth paste.

In a bowl ; combine dal and yellow mithai colour.

Mix it.

It should be of medium consistency.

Add more water if required.

Heat ghee and pour this batter on the perforated spoon. (spoon with small holes)

Hold this spoon 3-4 inches above the kadai.....as ggee will be very hot.

Slowly tap the perforated spoon or with the help of spoon or your hand mix the batter on the perforated spoon, so that drops of urad dal falls in the ghee.

Do not over crowd the boondis.

Stir occasionally and once golden and crispy ;drain it, remove on the kitchen paper towel.

Sugar Syrup

Combine sugar and water in a non-stick pan.

Mix well and boil for 5-7mins or till sugar dissolves completely and is if thread consistency.

Add kesar, elachi powder, mix well and keep it aside.

Transfer in a serving dish and garnish with coriander leaves silver leaf.

Put the boondis in warm syrup and let it soak for 15-20 mins.
