Ingredients

  1. Curry shrimp
  2. 40 pieceshrimp uncooked
  3. 3 tbspcurry powder
  4. 2 clovegarlic
  5. onion, chopped
  6. 3/4 cupcoconut milk
  7. 1/2 cantomato paste
  8. 2 tbspchopped ginger
  9. 1salt and pepper to taste
  10. 2 tbspolive oil
  11. 1/4 mediumgreen pepper chopped
  12. coconut rice
  13. 1 cupuncooked white rice
  14. 1 1/2 cupwater
  15. 1/2 cupcoconut milk
  16. 1/2 cupsweetened shredded coconut

Steps

  1. 1

    For the rice, bring the water and coconut milk to a boil. Add rice and simmer for 15 mins or until rice has absorbed liquid but is not fully cooked. Add the shredded coconut, stirring occasionally until rice is fully cooked.

  2. 2

    On a pan heat olive oil and cook the onion, garlic and green peppers for a few minutes. Add ginger, tomato paste, coconut milk, and curry powder and bring to a boil stirring occasionally.

  3. 3

    Add pepper and salt to taste. Add shrimp and cook for about 8 minutes. Serve over coconut rice.
