Ingredients

4 servings
  1. 1 tbspvegetable oil
  2. 1 tbspbottled minced garlic
  3. 1 tbspbottled grated ginger
  4. 2stalks fresh lemongrass, peeled
  5. 2 cupwater
  6. 2(14-ounce) cans fat-free, less-sodium chicken broth
  7. 1 lbchicken breast tenders, cut into bite-sized pieces
  8. 4 ozuncooked angel hair pasta
  9. 1/4 cupchopped fresh cilantro
  10. 1 tbspfresh lime juice
  11. 1/2 tspsalt
  12. 2green onions, thinly sliced
  13. 1red chile pepper, finely chopped

Steps

  1. 1

    Heat oil in a large nonstick pot over medium-high heat. Add garlic, ginger, and lemongrass; sauté 3 minutes.

  2. 2

    Add water and broth; bring to a boil.

  3. 3

    Add chicken cubes and noodles; cook 5 minutes or until chicken is done.

  4. 4

    Remove from heat; stir in remaining ingredients. Let stand 5 minutes. Discard lemongrass.
