Ingredients

  1. 8 ozLinguini
  2. 1/3 cupLow-fat creamy peanut butter
  3. 2 tbspLow-sodium soy sauce
  4. 1 1/2 tbspRice wine vinegar
  5. 1/2 tspSugar
  6. 1 mediumRed bell pepper cut into thin stripes
  7. 3/4 cupSeeded cucumber
  8. 3 smallGreen onions sliced diagonally into 1/4 inch pieces
  9. 2 tbspChopped cilantro
  10. 1 tspChile paste with garlic
  11. 4 smallLime wedges (optional)

Steps

  1. 1

    Combine peanut butter, 1/4 cup water, soy sauce, vinegar, chile paste and sugar in a large bowl
    Whisk until blended.
    If sauce seems too thick, thin with a little water.
    Toss in additional ingredients
