Ingredients

  1. 3 largeEggs
  2. 1 cupSugar
  3. 2/3 cupPumpkin
  4. 1 tspLemon juice
  5. 3/4 cupAll-purpose flour
  6. 1 tspBaking powder
  7. 2 tspCinnamon
  8. 1 tspGinger
  9. 1/2 tspNutmeg
  10. 1/2 tspSalt
  11. Filling
  12. 8Cream cheese. Softened
  13. 4 tbspButter. Softened.
  14. 1 cupPowdered sugar
  15. 1/2 tspVanilla

Steps

    In a large bowl, combine eggs and sugar. Beating well. Add pumpkin and lemon juice mixing well until blended
    In a separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into greased 10x16 jelly-roll pan
    Bake 360 for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on a clean towel sprinkled with powdered sugar. Cool 10 minutes longer. Roll cake up in towel to form 'roll' shape. Set aside

    While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth
    Unroll cake and evenly spread filling over cake. Roll back up without the towel and wrap in plastic wrap.
    Cover and chill at least one hour
    Slice before serving
