Mix the semolina flour with the shredded coconut.

In a saucepan over medium heat, combine 2 tablespoons honey or simple syrup, 1 cup sugar, 1 cup milk, and the clarified butter. Stir constantly and heat gently until the sugar dissolves.

Pour the mixture over the semolina and coconut. Stir well to combine, but do not knead.

Grease a baking pan well. Spread the mixture evenly in the pan, smoothing the top with wet hands to level it. Bake in a preheated hot oven for the first 10 minutes, then reduce the oven temperature to 400°F (200°C) and continue baking until golden brown.

As soon as the basbousa comes out of the oven, pour the hot syrup over it. Return to the turned-off oven for 5 minutes, then let it cool completely. Cut into pieces and serve.
