Ingredients

  1. 2 1/2 cupssemolina flour (about 400 grams)
  2. 1 cupshredded coconut (about 80 grams)
  3. 1 cupmilk (about 240 ml)
  4. 1 cupsugar (about 200 grams)
  5. 1/2 cupclarified butter or unsalted butter (about 115 grams)
  6. 2 tablespoonshoney or simple syrup (about 30 ml)
  7. For the syrup:
  8. 2 cupssugar (about 400 grams)
  9. 1 1/2 cupswater (about 360 ml)
  10. Juice of 1 lemon or 1/4 teaspoon citric acid

Steps

    Mix the semolina flour with the shredded coconut.

  2. 2

    In a saucepan over medium heat, combine 2 tablespoons honey or simple syrup, 1 cup sugar, 1 cup milk, and the clarified butter. Stir constantly and heat gently until the sugar dissolves.

  3. 3

    Pour the mixture over the semolina and coconut. Stir well to combine, but do not knead.

  4. 4

    Grease a baking pan well. Spread the mixture evenly in the pan, smoothing the top with wet hands to level it. Bake in a preheated hot oven for the first 10 minutes, then reduce the oven temperature to 400°F (200°C) and continue baking until golden brown.

    As soon as the basbousa comes out of the oven, pour the hot syrup over it. Return to the turned-off oven for 5 minutes, then let it cool completely. Cut into pieces and serve.
