In a Dutch oven, heat olive oil over medium heat. Add onion, celery, carrot and garlic. Cook until soft, approximately 5-7 minutes.

Add red wine and cook an additional 2 minutes.

Add beef broth and FRONT STREET HEAT. Let simmer for 5 minutes.

With an immersion blender or regular blender, blend gravy until smooth.

Make a roux with flour and water. Stir into gravy until desired consistency. Season with salt and pepper.
