Ingredients

  • 1/2eggplant
  • 1/2onion
  • 1red bell pepper
  • 1 cupkale or any veggies you like
  • 2garlic clove
  • 1oil (avocado or olive)
  • 1/2 tspred pepper flakes
  • 1/2 candiced tomatoes
  • 3/4 cupgrated mexican cheese or similar
  • 3 tbspParmesan cheese
  • 3 tbsppanko bread crumbs
  • 1salt & pepper
  • 1Optional: bread

Steps

    Preheat oven to 400°F.

  2. 2

    Dice bell pepper, onion & garlic. Slice eggplant into 1/4in thick rounds.

  3. 3

    Heat 3 tbsp oil in medium pan.

  4. 4

    Medium heat: Add garlic, onion & red pepper flakes until garlic begins to brown, 1 minute or less.

  5. 5

    Add bell pepper & kale. Rip kale with hands into small pieces. Cook for 2-5 minutes. Add any vegetables or greens you like here.

  6. 6

    While the veggies are cooking, grease 5x9 glass dish. Add diced tomatoes. 1/2 can should cover base of dish.

  7. 7

    Season tomatoes with salt and pepper. Optional: Add cilantro or tyme. If you like spicy add cayenne.

    Season tomatoes with salt and pepper. Optional: Add cilantro or thyme for flavor. If you like spicy add cayenne.

    Add thin layer of cheese.

  10. 10

    Add oil to pan & heat. Lightly sear eggplant on each side. Be sure to coat eggplant on both sides.

    Add oil to pan & heat. Lightly sear eggplant on each side. Be sure to coat eggplant with oil on both sides.

    Mix remaining cheese, Parmesan cheese, and bread crumbs in bowl. Add over top, creating a nice layer.

    Bake for 35 minutes.

  14. 14

    Let sit for 5 minutes and serve. Optional: Add bread to oven while dish rests.
