Pistachio Pudding (Mahalabia with Pistachios)

In a saucepan over medium heat, combine the milk, sugar, and ground rice. Stir the mixture until it becomes warm, then add the ground pistachios, cardamom, and pistachio or almond extract.

Continue stirring until the mixture thickens. Add the orange blossom water and rose water, and stir well. Pour the pudding into serving glasses and garnish with pistachios and other nuts as desired.

Let cool, then refrigerate and serve chilled.
