Mashed potatoes with bacon and chives and garlic
My most successful attempt at re-creating the amazing potatoes my mom makes every year.
Steps

Peel potatoes and cut into 1 inch peices.

Boil potatoes in a large pot until tender.

Drain potatoes unto colander and set aside.

Put the bacon in the now empty pot and start cooking it on high (about 5 minutes)

When the bacon is about halfway done, add the onions and garlic, and continue cooking until bacon is getting crispy.

Add the potatoes and mash them with the bacon until most of the lumps are gone.

Add butter and stir until melted. Then add sour cream.

Salt and pepper to taste.
