Ingredients

  • Filling
  • 6sausages
  • 1Red onion
  • 1Bell pepper
  • Egg filling
  • 5eggs
  • 6egg whites
  • 1/4 cupmilk
  • 1 cupGrated cheese
  • 1 pinchsalt
  • 1 pinchpepper
  • Hollandaise Sauce
  • 6egg yolks
  • 3/4 cupbutter
  • 2lemon juice
  • Crepes
  • 1 cupflour
  • 2eggs
  • 1/2 cupmilk
  • 1/2 cupwater
  • 1 pinchpaprika

Steps

  1. 1

    In a large pan, cook sausage over medium heat. When sausage is half cooked through, drain the fat, and add onion and pepper. Cook until sausages and onion are cooked. Remove from pan.

    Whisk together 5 eggs, 6 egg whites, 1/4 cup milk, and cheese. Pour egg mixture into pan, and stir while cooking until set. Remove from pan.

  3. 3

    In a double boiler, over medium heat, combine egg yolks, butter and lemon juice. Whisk continuously. Remove from burner when butter has completely melted.

    Make crepes, with flour, water, eggs and milk.

  5. 5

    Spoon sausages and egg mixture onto crepes, fold in a half circle. Top with hollandaise Sauce and paprika.
