Dissolve yeast and sugar in a bowl. Let stand until fluffy. About 10 mintues

Combine yeast mixture with milk, butter, salt and 4 cups of the flour. Slowly add the rest of the flour. If you are using garlic, pour in desired amount.

Knead on a lightly floured surface until smooth. About 8 mintues.

Lightly oil large bowl, coat dough with oil. Let rise until doubled in size. About one hour

Preheat oven to 400· f.

Deflate dough, cut to desired loaf size, shape. Place on lightly greased cookie sheet. Cover and let rise until twice the size. 15 mintues.

Coat with more melted butter, add cheese if you are using any. Bake for 25 mintues, or bread sounds hollow when bottom is tapped.
