Ingredients

  1. 1 tbspextra-virgin olive oil, plus more for baking dish
  2. 3 cupwide egg noodles (3 cups is about 5 ounces)
  3. 1/2 cupfreshly grated Parmesan
  4. 1 1/2 cupsour cream
  5. 12 ozground beef
  6. 1red bell pepper, seeded and chopped
  7. 1 bunchscallions (green and white parts) finely chopped
  8. 1 tspItalian seasoning
  9. 1 tbsptomato paste
  10. 2 cupgrated cheddar
  11. 14 1/2 ozcan of petite diced tomatoes
  12. 1kosher salt

    preheat oven to 425°F

    oil a 2-quart baking dish

  3. 3

    bring a large pot of salted water to a boil

  4. 4

    add the noodles and cook to al dente (according to the package directions)

  5. 5

    drain and put in the prepared baking dish

  6. 6

    toss with the sour cream and Parmesan

  7. 7

    meanwhile, heat the olive oil in a large skillet over medium-high heat

  8. 8

    add the ground beef and cook, stirring, until no longer pink (about 4 minutes)

  9. 9

    add the bell peppers and scallions and cook until crisp-tender (about 3 minutes)

    make a space in the pan, add the tomato paste and toast for a minute

  11. 11

    sprinkle with the Italian seasoning

    add diced tomatoes, stir and bring to a simmer

    cook until slightly thickened (about 2 minutes)

    pour the beef mixture over the noodles and sprinkle with grated Cheddar

    bake on the middle rack until the cheese is melted and the edges are bubbling (about 15-20 minutes)

    let stand for 10 minutes before serving
