
Sweet Potato Shepherds Pie

Boil sweet potatoes

Once soft, mash potatoes. Add almond milk and blend. Add pepper and salt to taste. Set aside

Pre heat oven to 375

Heat 2 tbs vegetable broth in skillet over medium heat. Cook onions until translucent, add garlic and cook for 2 mins.

Add celery, carrots, peas, corn, thyme, rosemary. Increase heat to medium high

In a small bowl, whisk 1/2 cup vegetable broth and arrowroot until smooth and add to skillet. When close to boiling reduce heat. Add salt and pepper to taste.

Remove from heat and add egg replacer/water combo (pre mix)

Pour veggie mixture in 2 qt (sprayed) dish, spreading evenly. Spoon potato on top. Sprinkle nutmeg

Bake at 375 for 40 mins, let set for 20 mins
