
Chorizo Breakfast Casserole

Preheat oven to 375

Dice onions and garlic. Sauté garlic for 30 seconds or so on medium high, then reduce heat to medium add onions. Continue to cook, stirring occasionally, for 15 minutes, or till caramelized.

Meanwhile, shred the sweet potato, beat the eggs in a large bowl, and add sweet potato to the eggs.

After the onions have caramelized, add the chorizo to the pan and cook till it starts to crumble. Then add the meat/onions to the eggs, add salt and pepper, and combine.

Grease a casserole dish and pour the meat/eggs into it. Cook for 25-30 minutes, or till the eggs are set
