  • 2 eachcelery stalks, chopped
  • 1 smallgreen pepper, chopped
  • 2 eachserrano peppers, chopped (one seeded)
  • 3 eachgarlic cloves, chopped
  • Season Mix
  • 1 tspsalt, to taste
  • 1 1/2 tsppepper, black/white
  • 1 tspthyme
  • 1 tspbasil
  • 1/2 tsporegano
  • 1 tspgarlic powder
  • 1 tspdry mustard
  • 1 eachbay leaf
  • Liquids
  • 4 cupstock
  • 2 cupwhite wine
  • 3 cupwater
  • 1tabasco, to taste
  • Meat
  • 1 eachham hock
  • 1 slicesalt pork
  • 6 ozsmoked sausage, sliced
  • Beans and Rice
  • 1 lbred beans, soaked
  • 1rice, cooked

Steps

  1. 1

    saute' veggies

  2. 2

    add season mix and saute' some more

  3. 3

    add veggies, liquids, ham hock & salt pork, and red beans to crock pot

  4. 4

    deglaze saute pan

  5. 5

    cook in crock pot for 10 hours, low

  6. 6

    discard ham hock and salt port

  7. 7

    add smoked sausage

  8. 8

    serve with rice
