  7. Season Mix
  8. 1 tspsalt, to taste
  9. 1 1/2 tsppepper, black/white
  10. 1 tspthyme
  11. 1 tspbasil
  12. 1/2 tsporegano
  13. 1 tspgarlic powder
  14. 1 tspdry mustard
  15. 1 eachbay leaf
  16. Liquids
  17. 4 cupstock
  18. 2 cupwhite wine
  19. 3 cupwater
  20. 1tabasco, to taste
  21. Meat
  22. 1 eachham hock
  23. 1 slicesalt pork
  24. 6 ozsmoked sausage, sliced
  25. Beans and Rice
  26. 1 lbred beans, soaked
  27. 1rice, cooked

Steps

  1. 1

    saute' veggies

  2. 2

    add season mix and saute' some more

  3. 3

    add veggies, liquids, ham hock & salt pork, and red beans to crock pot

  4. 4

    deglaze saute pan

  5. 5

    cook in crock pot for 10 hours, low

  6. 6

    discard ham hock and salt port

  7. 7

    add smoked sausage

  8. 8

    serve with rice
