Ingredients

  1. 6 smallpotatoes
  2. 1cherry tomatoes
  3. 1 cancorn
  4. 1 canblack eyed peas
  5. 1chopped onion
  6. 1baby spinach
  7. 1sriracha sauce
  8. 1mayonnaise
  9. 1ketchup
  10. 1soft shell tacos
  11. 1garlic
  12. 1lime

Cooking Instructions

    Cut potatoes into small cubes roughly 1-2cm in diameter

  2. 2

    Dice garlic and onions and cook in a pan with oil until onions are brown

  3. 3

    Add potatoes to the pan and put the pan down to medium low. Stir frequently

  4. 4

    Add beans and corn until heat has gone through the breans

  5. 5

    Add one layer of spinach to the tacos then a serving of bean mix and diced tomatoes with sauce on top

  6. 6

    SAUCE: 1 cup of Mayo. 2 tablespoons of sriracha. 1 tablespoon of ketchup. Stir well

  7. 7

    Squeeze lime for flavour
