
Potato, corn, beans soft shell tacos

Cooking Instructions

Cut potatoes into small cubes roughly 1-2cm in diameter

Dice garlic and onions and cook in a pan with oil until onions are brown

Add potatoes to the pan and put the pan down to medium low. Stir frequently

Add beans and corn until heat has gone through the breans
- 5
Add one layer of spinach to the tacos then a serving of bean mix and diced tomatoes with sauce on top

SAUCE: 1 cup of Mayo. 2 tablespoons of sriracha. 1 tablespoon of ketchup. Stir well

Squeeze lime for flavour

While on vacation with my family, we went surf fishing. I caught this fish. My oldest daughter was scared of the fish when it was jumping in the bucket. Now she is 30 years old, yelling dad keep that thing away from me. Well to make a long story short we cleaned the fish and cut it into small nuggets. The reason for this was because the drama shown made my oldest granddaughter scared of a little fish. So the only way for her to try it was in small pieces.
