Rice Pilaf

A really quick and easy side dish to accompany many meat entrées. I also like to add onion or other veg sometimes. Also, vegetable stock can be used in place of chicken stock/soy butter used to make this vegetarian or vegan friendly.

Steps
- 1
Break up spaghetti noodles into 1 inch long pieces (about 1/4-1/3 cup)
- 2
Heat a pot with a tight fitting lid over medium heat with the lid off. Melt the butter in the pot, then add the broken pasta pieces and toast until a deep golden brown.
- 3
Add the rice and stir, then add the chicken stock and bring to a boil.
- 4
Cover and reduce the heat to low or simmer. Cook for 18-20 minutes, then fluff rice with a fork.
