Calabasitas, that's the name for this Mexican style zucchini. Another one of my top Mexican dish to make. You can make it as a side dish but i enjoy it as a main dish serve with some beans & quesadillas.

Ingredients

  1. 2Large zucchinis
  2. 2Medium tomatoes
  3. 1Medium onion
  4. 2garlics
  5. 1/2 cancorn
  6. Pinchsalt
  7. Pinchblack pepper

Cooking Instructions

    In a large pan Heat up some Olive oil in medium heat.

    Add diced zucchini and saute for 10 minutes, stirring often

  3. 3

    Add Pinch of black pepper, garlic & onions & continue cooking for another 10 minutes

  4. 4

    Add tomatoes & stir

  5. 5

    Add half cup of whole corn kernel.

  7. 7

    Stir & let simmer for another 10 minutes or till zucchini is slightly translucent in the center.

  8. 8

    Serve & enjoy as main dish or side dish.

Thanks for this great recipe! I tweaked it a little because I didn't have fresh tomatoes and I had a jar of minced garlic. And because the onions have to be cooked all the way for my stomach's sake, I sautéed them first, then added the zucchini and cooked it with the lid on. After 10 minutes, I added the garlic and stewed tomatoes and cooked it with the lid on. I figured that might hasten the cooking of the zucchini. Then when the zucchinis were almost done, I added a small can of corn. Yum! Thanks for the recipe! 🙂
