having just bought a while bunch if lentils, spices and vege I wanted to make a healthy light lunch.
Steps

Soak lentils for 20 minutes

Finely chop garlic, ginger, celery and onion.
- 3
Heat oil in saucepan and add all ingredients except lentils.

Fry off until paste like.
- 5
Drain lentils and place into another saucepan. Cover them with water, bring to the boil then simmer for 15 minutes.

Add the lentils to the paste.
- 7
Serve on lettuce leaves with natural greek yoghurt and chopped tomato.
