Ingredients

  1. 4 mediumyellow tomatoes
  2. 3 mediumcucumber
  3. 2 largeyellow bell pepper
  4. 2Yellow bell pepper
  5. 9 mediumyellow tomatoes
  6. 4Cucumber
  7. 1/3 cupYellow onion
  8. 3Garlic clove
  9. 1/3 cupFresh basil
  10. 2 cupVegetable broth
  11. 4 cupGolden veggie juice
  12. 2 tbspOlive oil
  13. 2 tbspWhite wine vinegar
  14. 1Salt and pepper
  15. 1Greek yogurt

Steps

  1. 1

    Golden veggie juice: chop yellow tomatoes, cucumber and bell pepper, put in juicer; should yield 4 cups

  2. 2

    Reserve 2 tb chopped yellow pepper for garnish

  3. 3

    Core/peel/seed/chop: bell pepper, yellow tomatoes, cucumbers, yellow opinion, garlic. Add to large pot or bowl with: veggie broth, veggie juice, olive oil, white wine vinegar. Mix.

  4. 4

    Put 3.5 cups of soup in food processor and return to bowl.

  5. 5

    Chill 5 hours

  6. 6

    Serve with basil and Greek yogurt
